Spicy Roasted Potatoes

2 1/2 lbs red potatoes cut in half or quarters, depending on the size of the potatoe
A couple tablespoons canola oil
2 shallots finely chopped (I usually just use a couple tablespoons of onion)
1 clove of garlic, minced
3/4 tsp paprika
1/4 tsp cayenne pepper
S & P to taste
